I impatiently picked a watermelon from my garden the other day thinking it was ready only to cut into and find out that it was in fact still quite white with only a slight pink in the middle. I nearly cried! Now what was I to do with this watermelon. I couldn’t bare to think I would have to throw it out so what did I do?… Googled unripe watermelon recipes of course!
The recipe I found happened to use my two favourite ingredients…lime and coriander!
I found the recipe on Taste.com but have altered it slightly using honey instead of sugar. You don’t have to use unripe watermelon either you can use a ripe one or even swap the watermelon for other fruits such as papaya, peaches or pineapple.
Watermelon chopped to bite size chunks
1 green chilli thinly sliced
1/4 white onion thinly sliced
1 lime juiced and rind grated
2 tbsp of oil of choice (I used olive oil)
1 tbsp of honey
Beautiful fresh summer salad!
