Well… after my mishap of forgetting to take photos of the chocolate pie at the workshop…I just had to make it again didn’t I? hehe


The photo actually doesn’t even do it justice for just how decadently delicious it is. I will warn you though it is raw food therefore very full of nutrition…therefore you only need a small piece or better yet as it is GOOD for you have it as a meal!


Hmm maybe I should wait until tomorrow to give you the recipe and just let your mouth water…


OKAY, OKAY, HERE IT IS!


BASE:
1 cup of nuts of choice (nice with almonds, macadamia, brazil or pecans)
(can use seeds such as pumpkin or sunflower if you prefer to stay away from nuts or half nuts and half seeds)
2/3 cups pitted dates (I like the fresh medjool best)
1/3 cup desiccated coconut


FILLING:
2-3 ripe avocadoes
3 tbsp maple syrup
1/2 cup cacao or carob powder
3/4 cups fresh dates (or dried dates soaked)
1/2 cup dried apricots, soaked
1/3 cup coconut oil


SAUCE:
1/2 cup fresh strawberries (or frozen thawed berries)(can use any berry as a topping)
1/4 cup maple syrup (honey or agave)
squeeze of lemon


Blend the base ingredients until just sticky.
Press into pie tin or muffin cups and freeze while making filling.


Blend filling ingredients until smooth. Pour into base and return to freezer until set.


For sauce blend berries, lemon juice and maple syrup until smooth. Set aside until ready to serve.


Pull pie out of freezer and let sit about 15 minutes prior to serving.

And for those who have been frightened by the thought of avocadoes in a dessert, don’t be as you cannot taste them but they give the dessert such a velvety texture. A must!
